Farmer’s Market Thursdays: Inspiralized Dinner Party with HobokenGirl

If you’ve been following my Twitter or Instagram, you’ve probably noticed that I’ve been spending some time with Jen from HobokenGirl (a Hoboken blog geared towards girls). So, what’s up with that? Well, besides the fact that she’s a cool Jersey chick with an adorable French bulldog pup named Pierre, her audience happens to be perfect for Inspiralized dishes – girls who to love to try new things!

On Tuesday, I went to the Downtown Hoboken Farmer’s Market and stocked up on zucchinis, corn and some fresh cracked wheat bread and headed over to her apartment to cook us dinner. Check out my Instagram and hers for some funny videos from the evening.

Skinny Sundays: Creamy Tomato Zucchini Pasta with Salmon and Asparagus

I don’t know about you all, but I definitely took advantage of the July 4th holiday and perhaps had a bit too much to eat and drink and not enough treadmill time. No worries – Skinny Sunday is here!

Tonight’s recipe contains chunks of yummy salmon. Salmon is infamous for its richness in omega-3 fatty acids which are vital to the health of our entire bodies. Worry no more! On Skinny Sundays, I’ll be posting a healthy, low-calorie pasta dish to set you on the right path for the week. No more eating lettuce to detox… we’re Inspiralized, remember? That means a big ole’ bowl of guiltless pasta!

Lightly Breaded Filet of Sole and Sundried Tomato Zucchini Noodles with Olives, Spinach and Roasted Potatoes

IMG_0994 copy

My mom used to make this delicious breaded lemon chicken and sole growing up. I’ve never thought of recreating it until now…. but eh, I had a stressful day, and I needed some comfort food and my mom wasn’t around, since you know, I don’t live at home anymore. my plan was to make a pesto pasta (which is my #1 go-to comfort dish), but the little gourmet market in my building was out of basil… go figure. I improvised and decided to use the rest of my sun dried tomatoes and make a pesto that way. this was a crowd pleaser …. well, for my crowd of one: Lu.

Did some recipe testing tonight… and Lu was a HUGE help – he even spiralized a bit!
